We were a large group, and so we were lucky to have our own private space filled with family memorabilia At first glance, it looks like complete chaos in a decorative sense, flowered wallpaper, large and small frames of ornate and simple designs, old fashion photographs, modern portraits, decorations with clashing colors and styles.

Absolutely delicious from start to finish! The seasonal vegetable plate especially— between the cornbread, sweet potatoes, carrots, and tomatoes, I was unable to choose a favorite. Every dish was so well thought through and spiced. The service was great also, quick, attentive, and very kind to recommend us both a bar and a breakfast place worth checking out during our stay. We will definitely be back if we’re ever in the proximity of Louisville!

We decided to come here last minute for our anniversary dinner. For a Tuesday night it was busy, but not overly crowded. The environment was very comfortable and lively while still being an upscale, romantic experience and a bit moody with the lighting and decor. Service was wonderful and the food was absolutely amazing! We loved both our dishes. I am vegan so I got the spaghetti squash and mushroom ragout which comes vegan as it is. My husband got the bison burger. We loved them both, and HE actually loved my dish better than his! It was incredible, wonderfully flavored, and so much food. 10/10! We got a desert which my husband loved (no vegan dessert options), but then they bring cotton candy with the check! Cute touch. We ended the evening walking around the 21c gallery connected to the restaurant. Check this place out!

Had a really nice brunch here. The service and the food was great the atmosphere was unique with some original wall hangings including a couple of buffalo. The restaurant is attached to a hotel with a very unique museum. The only drawback to me was the amount of room there was. The tables were so crammed into the space with very little room for the guests or the wait staff to move. Id definitely go back.

My friend and I were guests of 21C hotel in which Proof of Main is located. Immediately upon arriving at the restaurant, we were greeted with staff and a bartender exhibiting extremely rude behavior. They were unwilling to be of assistance as we were hoping to have a few appetizers and drinks before heading to dinner. When asking for a menu, we were handed a small square piece of paper containing a bar code and told to scan it, “if you don’t like it, you can talk to a Manager.”When asked for a bourbon menu, we were told they didn’t have one, but to “look on the shelves.” Being in bourbon country and considering they had what appeared to be over 200 bottle available, simply looking on the shelf didn’t seem like a prudent endeavor. When pressed further about why the staff seemed unwilling to serve me and my friend, we were promptly asked to leave by the Manager, without cause or provocation. We then the front desk agent to speak with the GM, whom was not available and we offered a chance to speak to the MOD (Manager of Duty). Great we thought, only to be greeted by the very Manager from Proof in Main that had just demanded we leave the restaurant.Note: this occurred at approximately 5:50pm on a Thursday and the bar / restaurant was practically empty During a time when 95% of all Louisville businesses are closed or boarded up, one would think a restaurant would happily welcome paying customers. The experience got worse when we attempted to return the following night (Friday), hoping for a better encounter. We were met at the hostess stand and immediately advised “we aren’t allowed to serve you” by the young female hostess. A male Manager then approached us and after tying to have a conversation with him, he sternly stated, “we reserve the right to refuse service to anyone and right now we are refusing service to you. Get out of the restaurant now.”It was apparent the hotel, which was understaffed (we saw 2 hotel employees total), and restaurant collectively, did not want our business. It became apparent, the restaurant staff and Management Team became triggered by the “Keep America Great” hate me and my friend we were wearing. We then returned to our room, promptly made a reservation at the Galt house and departed the property.I would never recommend this place, not 21c hotel, and wouldn’t return if they gave me free dinner and drinks for life. The lack of customer service and downright nastiness is something I’ve never experienced in my life.

Overall a good meal. We really enjoyed it, but not spectacular and definitely not a 4.5 rating – more like a 3.6/ 3.7. However, it is a strong choice for a nice meal and drinks. I would choose Proof for its drinks and the bar rather than the food selection.Located in the 21c Gallery Hotel the setting is really cool and fun. The walls and ambiance all add to the decor. The restaurant, however, does not seem to fit this style with the booths, tables and seats being more in line with a chain or or mid-level eatery. The bar has very good and unique drinks and the bartender was a skilled mixologist and cool for conversation. We really enjoyed the mixed drinks. They made a delicious paper airplane. Their selection of whiskies and bourbons was respectable. The waitstaff for the restaurant had a bit of an attitude. They were ok after chatting with them for a bit, but first impressions were less than inviting. The bathrooms are really cool and very clean. They have one wall with a water fall that allows one to see outside. A bit of a surprise at first and definitely causes one to take a look outside to verify that it is indeed one way. Really cool effect. The menu is limited, but in these times that is to be expected. That being said, some of the items needs a bit of attention.—The octopus has great spices. It was a little too crispy on the ends and way too salty - they did very well with spices and just confused salt with taste... take away the salt and it will be good.—The burger patty was delicious and cooked as ordered. The bun, however, was not great. It wasn’t crispy with the lower portion turning into mush, not sure about the type of bread – it could have been better to match the fantastic meat. The sauce was nice, but it lacked something. It was just ok. The fries were not great. A little flaccid, we were able to find some crispy ones- the seasoning was nothing spectacular- really needed something for this plate to stand out.—The Pork Chop was again ok. The meat was done well and juicy, but was a little bland. The hominy and other side spices was fantastic. It really helped the dish. It was good, but nothing worth noting. We had a good meal, but the quality was not there for the price.

Plenty of seats at the bar, cocktails were entertaining to watch being made, the bartender was friendly and knowledgeable and the pork cheeks were decent. Bathroom is in the museum downstairs.I would have rated one star based on the first time. We didnt have a reservation and wait for a table was an hour and a half, but there were multiple free tables. This was a Thurs night. Went to the bar and seats were full. A group were sitting in the front corner and told a lady who sat next to them, we dont know you and instructed her to leave. After she left, I sat in that chair, but they didnt say a word (probably because my husband is large) and then they left. We finished our drinks and left turned off by that group.Side note - I love the artwork.

This is fancy restaurant with fair prices for the portions. I saw other reviews of people complaining about prices but you have to think about where is located, the service they provide and the quality of their food. For me, I have a great experience, I was there for brunch and order the brunch special which is the fried chicken on waffle with peach and chilly I think. The mix between the sweet and hot was perfect. The waffle wasn’t dry like other places, and I’m not a waffle fan, but this one was excellent. The term of the fried chicken makes the whole plate taste fantastic. I hope they keep this on their menu. My wife Oder the proof Benedict, the eggs were cooked perfect, it wasn’t hard neither juicy that make the plate have the egg on everything. This was the perfection of the Benedict eggs. The flavor of the red eye hollandaise mix make the plate taste more flavorful. I also saw they have a Puertorrican drink called Soñando con Puerto Rico, my country, and I tried. I have to say, the gin with papaya and the other mix remind me of the flavors of my island. It was a perfect drink to have with my brunch.Average for all I have to recommend this place. I definitely will be back.

A great stop with outdoor seating during Covid. We passed through town last weekend and this was recommended by local friends. Brunch was drop dead amazing. Strongly recommend the fried chicken and waffles - very crispy large chunk of boneless chicken with much more flavorful and spiced batter than most boring versions along with a peach chutney vibe over a cheddar and onion waffle - it all worked and my wife and I just kept freaking out after every bite. The breakfast sandwich is a butter soaked butter biscuit with butter and butter with fluffy egg and tasty but not overly fatty sausage. Yes, this meal may take a day off your life, but it is sooo good and may be better than the chicken and waffles. To boot it is accompanied by the most ridonkey hash brown that is incredibly crispy and perhaps tossed in a smokey paprika. Id allow someone to slap me in the face with this potato product in hopes Id catch a mouthful.Wed had some bourbon the night prior so took it easy but I did have the best boozy coffee Ive ever had - rum, cinnamon, coconut milk and some other stuff along with cold brew. order one.awesome experience. they also have cool art in the hotel its attached to including the many penguins - we have the meerkat in front of our home so knew wed like this place as we share some similar tastes in fuchsia outdoor artwork...

New to louisville and my wife took me to Proof on Main for my birthday so I could marvel at their bourbon collection and also to celebrate buying our new house. I am speaking of only the bar because that is where we sat. First off Im a neat bourbon drinker and will say that the price for my single shot was so above the market it made me feel like being taking advantage of. Secondly my wifes drink was a craft cocktail, if thats what you want to call it be my guest, but it was little more then pineapple juice and tonic with a massive ice cube. Where was the whiskey in the drink? Please dont misunderstand me, my bourbon was fantastic, but after I finished it in roughly 15-20 minutes later I sat there looking over politely at the bartenders making eye contact numerous times hoping to order another drink. Instead I was looked at with total disregard. So I sat there pleasantly enjoying conversation with my wife letting her finish her drink, thinking that surely they will come and take another drink order when she finished her drink, but to no avail. We sat there for more then 30 minutes waiting for 1 of the 2 bartenders to come over. Of course they didnt seem to care even though they could clearly see we had no drinks as we were literally the closest table to them. In the 30 minutes we saw them go to corner tables at least 3 times each walking right past us on numerous occasions and flirt with some customer at a table who had clearly been there with in the last few days already. After a few more minutes I was fed up and pulled out my wallet deciding to pay. At this point you would think they would be happy to let us go but no. Still sat there for 15 minutes until I finally said to the bartender as he walked by if he would close us out. He did and we left with a feeling of being treated like we were nothing more then street scum in some way. Here is what I will say. Proof on main has a mighty bourbon collection that any lover of the drink would love to have for their own, the prices are a little high for neat, but in a downtown upscale hotel I get it, but as to the service of the 2 bartenders, that was little more the an absolute joke in the way we were treated. Disrespected and not given any friendly service. I will never speak good of this place nor will I recommend it strictly on the basis of those bartenders. Proof on Main, a place I wanted to be fascinated with was nothing more then a terrible experience I will regret going to for a long time.

An amazing experience. While my wife disagreed, the only issue I had with my dish, the baked 1/2 chicken with risotto and greens, is that it seemed a bit heavy on the citrus notes. Other than that small issue on my part, the rest of the meal was a wonderful. The vibe was classy Sunday dinner in your grandmas quirky dining room, while alternative music plays from the speakers, and the tatted waitstaff bring your food. That is the only way I can describe this place, and that is not meant as a slam against the restaurant. The staff was beyond professional with suggestions and service, and I cant praise this place enough. Also, their bourbon menu is not to be missed.

After Event DinnerWe attended an event within walking distance so I made reservations for 8:15 and we arrived at 8:00 and were promptly seated. We ordered the Beet Salad to share and the problems started with ordering a main entree and side. The server recommended the Cast Iron Pork Chop to my husband and I just couldnt bring myself to order the pasta dish at such a price so I opted for the Shrimp Roast; however, the Cast Iron Pork Chop was already gone so he ordered the Steak Strip Medium. The Beet Salad is very good and the wait staff periodically checked in on us; however, after placing our meal order with the addition of Carrots it took over an hour to get our dinner course. There were large groups there but I dont remember the last time we waited for over an hour to get our meal. We had no other plans so we didnt make a scene except to reflect our disappointment through this review. The steak was not as ordered and came pretty rare but that was on my husband since he should have sent it back. The Shrimp Roast was so salty I just about couldnt eat it. Yes, I should have sent it back but I used the roasted lemon and juiced it all over the dish to tame the excess salt. For a dining experience at this price point I certainly expected more. The art is interesting and the restaurant is lively but they really missed the mark with the food and wait time. I dont see us returning.

He was consultative and directed me to a spirit forward cocktail with some interesting ingredients, served in a glass with a literal rectangular log of ice.For food, I went with the bison burger. It was thick and the meat came out perfectly medium rare. I also got the chicken fried pork cheeks (available only at the bar). Proof on Main is a very nice restaurant located in the 21c Museum hotel and complete with, what we assume are, common elements at all the restaurants in the various 21c Museum hotels (we were at the Nashville one earlier in this trip) including EXCELLENT food and drinks, cotton candy with a color unique to this hotel, and a smattering of giant red penguins (blue in Nashville!) who will join you for dinner! We were in town for 2 nights and sat at a table with our local friend for hours (we kept monitoring the room to make sure there was at least one empty table to make sure we weren’t keeping anyone else from being seated) and the staff was VERY friendly and accommodating throughout our time there.I started with the Smoke Rings Cocktail (it was mandatory [in my mind] that every drink in Kentucky was bourbon based, if not straight up Bourbon. This one was made with Buffalo Trace Bourbon, PF Dry Curacao, Ramazzotti Amaro, Lapsang Souchang Tea, and C&K Absinthe) - OK, I mean absinthe and Bourbon, together at last! This was really really with a perfect smokey favor, the right amount of sweet, and an impressive giant ice cube in the middle.I also had the Chilled Carrot Soup (Another common element amongst the various 21c Hotel restaurants is a different chilled soup in the summer) This wasn’t sweet like I thought it might be, but had lots and lots of flavors, all good…This was a unique to eat a soup where different bites tasted differently…I liked it a lot.The bread and butter service was good for me and they were nice enough to bring gluten free bread for the the two GF eaters I was with. They didn’t love the gluten free bread, but were happy it was offered.Their menu is seasonal (which is always a sign of an awesome restaurant.) I had the Ricotta Cavatalli pasta dish (no longer on the menu as I write this). It was also really good with lots of flavor, perfectly cooked pasta, and a nice lemon flavor to it. Also it was beautifully presented! My wife had the Roasted Heirloom Squash - She said “Last Year’s Tomato Jam” was the star of this nice and satisfying dish. She thought the tamale part tasted good but the consistency was slightly off for being called a tamale…a little too wet/thin. (Hey were from Southern California…the home of Mexican food so we have high standards here.Other vegetarian options were available, including cheeses, grits and various veggie sides.I closed out with the Raspberry Fig Mousse dessert which sounded and was amazing…a lavender honey infused house made gelato…a thin pretzel-like (but sweet) cracker surrounding the fig mousse. Very very very good. (Note the three “verys” Often desserts at fine dining restaurants don’t live up to the rest of the food. That was not the case here. This was excellent. We loved everything about our experience here and are excited to check out other 21c Museum hotels and restaurants wherever they may be. Oh multi-colored penguins of the world…we’re coming for you.

We were in town to help some friends move into their new apartment and went to Proof on Main for dinner. The ambiance was very nice and it felt like a really upscale but very welcoming to four people who had been moving furniture for hours. Our server, Lou, was great, very friendly and personable and explained the food sources (mostly local and from their own farm!) and menu very well. Theres a huge drink list and a number of local brews to choose from. We had the charred octopus, whipped ricotta, and bones as apps. The octopus was slightly on the salty side, but were very good, slightly charred but still tender. The whipped ricotta was served with bread and was delicious. And the bone marrow was fatty and meaty and just great, served with a refreshing green salad and carrots. For dinner, I had the beef option, which turned out to be strip steak with crispy potatoes and mushrooms. The steak was melt-in-your-mouth medium rare with a beautiful char. The potatoes were really awesome, thinly sliced, stacked and served in a rectangle of crispy, creamy goodness. For dessert, I went with the Key Lime Bar, great tang from the lime, and the crust was crunchy but overly so. A wonderful meal and definitely a place well be visiting again.

The hens on red river eggs over hash and chili was really good as was the veggie burger with pesto. Id come back anytime in...

Great little bar area! Nice bar tenders. Knowledgeable staff. Definitely priced right for some of the more rare bourbons when compared to other places. The Buffalo Burger was tasty, hubby not thrilled with pork chop. Breakfast is what we really like.....buttermilk pancakes are delicious and the hubby loves their version of eggs benedict.

DH and I went to lunch at Proof to celebrate my last session of radiation treatment.. Food and service were both fantastic. We loved the Bison burgers and fries. Yummy Loved the interior, it was fun and interesting without being kitchy. Definitely a return trip is warranted

Great food with a great bourbon selection. I’m giving them 5 stars also for service. I had a minor problem with my meal and they graciously took care of me afterwards. Above and beyond. I will totally come here again.

Enjoyed our Thanksgiving meal here this year. 4-course meal and we chose prime rib! Paired with a delicious bottle of wine recommended by our server.

Trendy bar with a cool vibe in the 21C hotel and art museum. Loved being able to enjoy a cocktail am while taking in three art. Best old fashion that Ive had in quite some time and what else should you expect in this region. Make sure to visit the mens restroom sounds odd but you just gotta

I honestly wasnt expecting much but was quite impressed. Had the hot chicken. Good heat but not overbearing. The relish really provided a nice balance. Portion size was just right. My party was all apart if the clean plate club!

Favorite spot in Louisville for brunch. Breakfast sandwich and eggs in purgatory are fantastic, all the appetizers are great, and their bourbon list is awesome. Shrimp and grits was a little underwhelming.

Visited last night for an impromptu visit for a date with my wife. We have 5 kids so getting out is rare for us. Man, I just wish I could say it was outstanding, but it just wasnt. Food and service were just ok. If Im gonna drop that kind of coin for a dining experience, I do expect to be well taken care of and leave feeling more than satisfied. And we just didnt come away with such an experience, unfortunately.

Great bourbon selection at the bar which has excellent atmosphere and art on display. The bourbon library (very long bourbon list) makes this a must see bar on the bourbon trail.
